Nothing says summer better than ice cream and if you are like me, sometimes ice cream by itself is simply not enough. Days like this call for something sweeter more indulgent than a simple scoop of the frozen cream. My easy solution, ice cream sammies!

What You'll Need:


Your Favorite Cookie Mix (I love using Betty Crocker's Double Chocolate Chunk Cookie Mix)
Vanilla Ice Cream
6 Frozen Strawberries
1/2 Cup Frozen Blueberries
1/4 Cup Chocolate Chips
Plastic Cling Wrap

Steps:


  1. Bake cookies according to package directions and let them cool. Cookies must be completely cool otherwise they will crumble when trying to assemble.
  2. In a food processor, pulse frozen strawberries until they are in small pieces 
  3.  In a small bowl add strawberries and 2 scoops of vanilla ice cream. Mix in strawberries and add ice cream until desired strawberry to vanilla ice cream level is reached. Place bowl in freezer 
  4. Repeat the above process for Blueberries using less ice cream to get a more colorful ice cream
  5. Depending on how you like your chocolate chip ice cream, you may or may not want to pulse chips in the food processor. I like smaller pieces of chocolate so I pulse mine in the food processor before adding to the vanilla ice cream. 
  6. Prepare sheets of plastic cling wrap while ice cream is in freezer. You will need squares to wrap each sammie in after assembly
  7. After taking each bowl of flavored ice cream out of freezer, stir well so that it is manageable to spread on top of each cookie
  8. Assemble each sammie by placing two heaping spoonfuls of ice cream on a cookie, being sure to keep the ice cream slightly heaped at the center. Place another cookie on top and lightly push down. Next wrap in the plastic cling wrap
  9. Quickly place in freezer to set up.
  10. Unwrap and enjoy!
