Who doesn't love a classic tomato basil bisque, especially with a piece of crusty bread or a hot grilled cheese? When I want something easy, delicious, and comforting I always turn towards grilled cheese and tomato basil bisque. After trying different canned soups and recipes, I finally found one that I love and it's a healthier version than your standard tomato basil bisque.

Lighter Tomato Basil Bisque 

Recipe adapted from A Spicy Perspective

What You'll Need:

2 TBS butter
1/2 yellow onion, chopped
3 cloves of minced garlic
14.5 oz can diced tomatoes
1/2 TBS tomato paste
1 small bunch of basil leaves or 1/2 package of basil leaves from your grocery store
16 oz chicken or vegetable broth
7 oz cannellini beans rinsed and drained
1/8 tsp crushed red pepper flakes
1/4 cup milk (I use lactose free 2% milk)
Salt and pepper to taste


Add butter, onions, and garlic in a large saucepan. Saute over medium heat until onions have softened and start to appear translucent.

Add tomatoes, tomato paste, basil leaves, broth, beans, and red pepper flakes. Stir. Adjust heat to medium-high and simmer for about 20 minutes. 

Turn off heat and either use an immersion blender or pour the soup into a blender and blend until smooth. Be sure to check that all beans have been pureed.

Add milk, salt, and pepper. Stir.

Serve with a side of crusty bread or your favorite grilled cheese.

Makes 3 servings
