5 Minute Nachos

Growing up in San Diego, classic family dishes always included lots and lots of Mexican Food. As a result, my comfort food and quick go-to's are almost entirely different types of Mexican Food. The other day I was starving for lunch and didn't have a lot of easy to make options so I whipped up these nachos in 5 minutes.

5 Minute Nachos Recipe 

What You'll Need:

Handful of Tortilla Chips
1/4 can of seasoned pinto beans (you can also use seasoned black beans, or refried beans)
1/4 cup fresh pico de gallo (you can easily make your own or buy premade at the store)
1/4 cup Cheddar cheese (sliced or grated- I used deli slices since it was all I had on hand)
1/8 cup leftover mexican rice (optional)

*Adjust quantities to fit your preferences. If you want more cheese or more beans go for it!


Place chips on a microwave safe plate.

Grate or slice cheese and sprinkle half on the chips. Next, add the beans and rice if using. Top with the rest of the cheese.

Microwave until cheese is melted, usually 1.5 minutes.

Top with Pico de Gallo and enjoy! 

Serves 1
