Pomegranate & Apple Galette

Recipe adapted from A Couple Cooks

What You'll Need:

For the Dough:

1 cup all-purpose flour
Pinch of Truvía Baking Blend sugar
6 TBS butter, cut into small pieces
1/4 cup cold water

For the Filling:

Seeds from 1/2 of a pomegranate
2-3 apples (I used Fuji)
1 tsp fresh lemon juice
2 TBS raw clover honey
3/4 tsp ground cinnamon
Pinch of ground ginger
Pinch of ground nutmeg
Pinch of salt
1/2 TBS melted mutter


Preheat oven to 375 F.

In a small sized mixing bowl mix flour and Truvia Baking Blend. Cut in the butter using a fork or pastry blender.

Sprinkle water over the dough and knead until a ball forms. Flatten the dough and wrap in parchment paper, wax paper, or plastic wrap. Place in refrigerator for 30 minutes.

While the dough is in the refrigerator, wash and cut apples into thin slices. In a medium sized bowl combine apples, pomegranate seeds, honey, lemon juice, cinnamon, ginger, and nutmeg. Stir to combine and coat.

Remove dough from the refrigerator and roll out on a sheet of parchment paper until a circle about 12 inches across. Transfer parchment paper  and dough to a baking sheet.

Pile the pomegranate and apple mixture at the center of dough. Spread the fruit out from center leaving about 1 1/2 inches of dough exposed.

Fold dough over the edges of the fruit.

Spread melted butter over the edges of the dough and bake for 40 minutes or until the crust is golden brown.
