This 20 Minute Greek Salad literally takes 20 minutes start to finish, including vegetable prep! It is my favorite dish to bring to potlucks because it travels well, can be made in advance, and holds up to sitting out during parties. Full of veggies and protein from the garbanzo beans it is a great salad to make during the holidays when you are busy and have little time to prepare dinner or a meal prep for lunches for the week.

20 Minute Greek Salad Recipe 


What You'll Need:

1 Cucumber
3 Roma Tomatoes
1/2 Red Onion
1 Red Bell Pepper
1 Can Garbanzo Beans
3 TBS Red Wine Vinegar
1/4 cup Olive Oil
2 tsp Dried Oregano Flakes
Pinch of Salt and Pepper

Steps:


Rinse and drain garbanzo beans. Add to salad bowl.

Cut cucumber in half lengthwise and then repeat for each half. Chop cucumber pieces into chunks. 

Remove top, center, and seeds from red bell pepper. Cut into slices and dice. Add to bowl.

Dice onion and add to bowl.

Dice tomatoes and add to bowl.

In a small bowl combine red wine vinegar, olive oil, oregano, salt, and pepper. Whisk together and drizzle over vegetables and beans.

Mix to coat vegetables and beans evenly with dressing. Enjoy!

    1. Such a great recipe for meal prep since you can chop all the veggies and make the dressing ahead of time and just drizzle on however much you want each portion!
