For Valentine's Day I bought this amazing cookbook from Anthropologie, Date Night In by Ashley Rodriquez of Not Without Salt. The first date night Nathan and I attempted was good but we only made one of the recipes according to the book and half store bought half homemade the other ones. The other day we decided to actually make an entire date according to the book and settled on Spring Feast since it is after all spring and we figured the ingredients were in season.

It was so much fun cooking these recipes! Typically Nathan will worry about the meat and I take care of the other recipes but this time we did a role reversal and he made the dessert (strawberry shortcake with freshly whipped cream), the carrots and helped prep the veggies for the salad. I loved helping teach him how to bake and explained how to measure the butter - he didn't have to scoop it into teaspoons but rather look on the packaging for the line measurement (I forget that not everyone knows this!). The whole experience was not only fun but forced each of us to take on a cooking challenge we were not used to.

But oh my gosh when it was al ready to eat...it was SOOOO GOOD!! Honestly one of the best meals in my life and knowing we made it all from scratch, that we knew 100% what we were eating and were eating in season veggies made it even better. Staying in for date night can become routine but using Date Night In every so often is such a great way to spice things up, learn how to cook, and have fun with each other in the process.
