Honeydew Melon Sorbet Recipe

  • Summer melons and summer heat go perfectly together with this easy (and healthy) sorbet recipe that I made this past week. It is so refreshing and can easily be adapted for any type of melon. If you aren't a stevia fan then honey would also work well but could change the flavor if you use a strong flavored honey like wildflower or orange. This sorbet is a little icier than the ones you buy in the store but if you like it creamier you could add a little dollop of yogurt.

Honeydew Melon Sorbet Recipe

What You'll Need:

1/2 Honeydew Melon
1/4 Cup Water
1 TBS Truvia
1 TBS Lemon Juice

Wash melon and cut into chucks. Place on a lined baking sheet and place in freezer for 2 -4 hours or until completely frozen.

In a food processor pulse chunks until they become crumbly. I had to do this in stages since my food processor is not big enough to fit all the chunks at one time.

Add water, Truvia, and lemon juice to the melon and continue to pulse until the crumbs become super fine and start to resemble sorbet in texture. Taste and adjust sweetness if desired.

Spread mixture into a metal loaf pan and place in freezer for 1 hour.

Scoop and Enjoy!

P.S. It tastes great with frozen raspberries as "sprinkles" :)
