Arugula, Peach, and Feta Salad Recipe


I shared this salad on my Instagram over the weekend and had a couple people ask me for the recipe so I figured I'd share here. It's super easy and you can sub out the fruit or greens for whatever you like. I think strawberries would be absolutely delicious with spinach. But since it's summer and peach season will be gone pretty soon, I am all about adding them wherever I can. Probably one of the saddest parts of winter/spring for me are the absence of peaches and nectarines, seriously!

Arugula, Peach, and Feta Salad Recipe  | Makes 2-4 servings


What You'll Need:

5oz arugula
2 peaches
4oz feta cheese
3 TBS olive oil
1 TBS balsamic vinegar
1/2 tsp dijon mustard (I use coarse ground)
1/4 tsp salt
1/4 tsp black pepper

Steps:

Prepare peaches and arugula by washing and drying.

Slice peaches by cutting in half and removing pit first. 

Make dressing by combining olive oil, balsamic vinegar, dijon mustard, salt, and pepper in a small mason jar and shake until combined.

On individual plates arrange arugula and peaches. Sprinkle feta on top and finish with a drizzle of dressing.

If you are making a large salad for a group and don't intend to plate the salads, I recommend cutting the peach slice in half and mixing the arugula, peaches, and dressing in a bowl prior to sprinkling on the feta.
