Cucumber Mojito Mocktail Recipe

Happy Monday! It was such nice weather in SF this weekend, I was so happy. I fully took advantage by sitting in the sun, heading to the pool, and barbecuing in the park. Since it was so warm, I wanted to make a refreshing drink but wasn't really in the mood for lemonade which is my typical go to. A mojito sounded good too but I didn't really want any alcohol so I played around in the kitchen and came up with this yummy mocktail which will be on repeat come summer.

I also love that it is green which instantly makes me feel like its healthier and full of vitamins haha which I know is crazy! If you wanted to turn this into a cocktail you totally could by adding rum or even gin if that's your thing :) 

If you can minimize the added sugar you add to this drink then it is a great alternative to plain old water when its warm outside. I like pulp in my juice because it adds more fiber and we all need to add more fiber to our diets but I know a lot of people don't like it. If I were to make this for a party I would definitely strain before serving, but for me I say cucumber pulp all the way lol!

Cucumber Mojito Mocktail Recipe


What You'll Need:

1 Cucumber, peeled
3 Limes
2 Cups sparkling water
Mint leaves
Brown rice syrup or sugar to taste
ice

Steps:

In a food processor pulse cucumbers until pureed. Add juice from 3 limes and a handful of mint leaves shredded. Continue to pulse until well combined.

In a pitcher or extra large mason jar combine juice and sparkling water. stir or shake to combine. 

At this point you should taste in order to see how much sweetener you want to add. I ended up adding 1 teaspoon of brown rice syrup and 2 tablespoons of sugar. Stir or shake well to combine. Add ice.

I liked the pulp from the mint and cucumbers but not everyone will. The easy solution is to strain with a fine mesh strainer.

Serves 2-4
